Squash Casserole

From the Sunshine State here's a recipe that's sure to brighten up your day. It really is a dish to die for! Has a lovely, rich taste. A great side dish, especially to a piece of grilled meat. Why are you still surfing the Net? You have some cooking to do! 

 
Ingredients:         
  • 1 kg (2 lb.) of yellow squash (frozen or fresh)
  • 1 roll of ritz or similar crackers (not saltines...for the Dutchies among us: 'beschuit' is perfect for this dish)
  • 3 tbsp. of butter
  • onions (if you like them)
  • seasoning (whatever kind you like similar to salt)
  • 225 grams (8 oz.) of cheddar cheese
Preparation: 

Boil squash until tender.  In a bowl combine crushed crackers, chopped onions, butter and shredded cheese.  Drain squash and dump over cracker and cheese mixture. Stir together and put into a casserole dish. Season and bake until done (in a preheated oven of around 180º-200ºC or 350º-390º F) which is usually about 10 minutes or so since the squash is already cooked. 

Serves 4.
