Thai style roasted pork

Deliciously simple and simply delicious! "Thai out" this fabulous recipe...amaze your friends and family with your culinary expertise.     
 

 Ingredients:         

  • 500 grams (1 lb.) of pork tender loin
  • 60 grams (2 oz.) of  brown caster sugar
  • 1 tbsp. of ground coriander leaves & stems (or ketumbar)
  • 1, 4 dl soy sauce (sweet kind)
  • 4 cloves of garlic, pressed
  • 1 tbsp. of fresh ginger root, peeled and grated                                              (equals 1 square piece of about 1" x 1"...2,5 cm x 2,5 cm)
  • 4  star aniseeds
  • 1,4 dl chicken stock
  • 1 large onion, chopped finely
  • some corn starch
  • 2 tbsp. cooking oil
  • 100 grams (3,5 oz.) of roasted peanuts, chopped coarsely
Preparation: 

Make a marinade of the soy sauce, brown sugar, ginger, coriander, garlic and the aniseed, remove superfluous fat from the pork and make sure any excess water has been drained from the meat. Leave the pork to marinade between 1-3 hours, turn at least once. 

Preheat the oven to about 190º - 200ºC or about 370º - 390º F.  Roast the marinaded pork in the oven for about 20 - 25 minutes until tender. You can also roast it on the BBQ...the taste becomes even better then... (To BBQ, or not to BBQ...that's the question).  

Meanwhile, fry the onions in the oil, slowly add the rest of the marinade and the chicken stock and the peanuts to it and reduce this down to a yummy sauce. Use some corn starch if you need to thicken the sauce a little 

Tastes lovely with some wild (black) and white rice... cook according the instructions.

Indian cucumber raita
Ingredients:         
  • 1 cucumber, peeled and grated
  • 125 ml of Bulgarian yoghurt (or better yet...thick Greek yoghurt)
  • some sweet chilipowder (optional)
  • cumin, roasted and crushed (to taste)
  • a bit of salt
Preparation: 

Put the grated cucumber into a salad bowl... drain any excess water, put a bit of salt over the cucumber to keep it from leaking any more water. Pour the yoghurt over the cucumber, add the sweet chilipowder and the roasted and crushed cumin, stir well. 

Both recipes serve 4.
