Quick Chick - Chicken in the oven

Let's assume you've got some friends joining you for dinner... You want something delicious, but you don't want to spend hours in the kitchen while your guests are sitting in your living room. Do you have to compromise? Not at all! This dish can easily be prepared ahead, so that you'll have time to chat with your guests and still enjoy some exquisite food! 

 Ingredients:         

  • 1 chicken of about 1 kg (2 lb.)
  • 750 grams - 1 kg (1½ - 2 lb.) of potatoes
  • 3 peppers, one green, one red and one yellow
  • 250 grams (½ lb.) of mushrooms
  • 1 large onion
  • garlic to taste (about 5 small cloves is nice, though)
  • salt & pepper to taste
  • some sweet chilipowder
  • 100 grams of lean bacon, cut into cubes
  • basil, oregano
Preparation: 

Check the chicken for any feathers and rub in with salt, pepper and chilipowder (inside and out!) Peel the cloves of garlic, stuff the chicken with the garlic. Peel the potatoes and cut into small pieces. Wash the peppers and slice them. Brush off the mushrooms, cut into pieces. Peel & chop the onion. Mix potatoes, peppers, mushrooms, onion and bacon in a large bowl, add oregano and basil to taste. Take a large oven dish with lid (of preferably 2 liters or more), grease the dish. Put the chicken into the dish, then arrange the vegetable mixture around the chicken... Preheat the oven to about 200° C or 390° F.  Leave in the oven for about 75-85 minutes on the middle rack. 15 minutes before you take out the chicken, take off the lid for a "tanned" chicken. 

Serves 4.
