English meat pie

Those chilly days are here again... Nothing like a good meat pie to get some of that warmth back inside of you. Try this one for size.  

 Ingredients:         

  • 2 onions
  • 400 grams of carrots (yes, those long orange sticks rabbits eat)
  • 500 grams of potatoes (1 lb.)
  • 500 grams of lean pork (1 lb.) 
  • 1 slice of cooked ham of about 100 grams (3,5 oz.) 
  • 25 grams of butter or some oil (1 oz.)
  • 1 tbsp. mustard 
  • 1 tsp. thyme 
  • 2 dl stock (but I prefer to use the same amount of Guinness as it gives a particularly nice taste to it) 
  • Worcestershiresauce to taste 
  •  salt & pepper to taste 
  •  4 leaves of puff pastry 
  •  1 egg 
Preparation: 

Clean and cut the onions. Clean the carrots, chop up into small pieces. Peel the potatoes and cut into cubes. Cut meat into small pieces and ham into cubes. Heat butter in frying pan (skillet), sauté meat. Mix in chopped onions, carrots and potato cubes and leave to fry together for about 3 minutes. Add mustard, thyme, stock (or Guinness), Worcestershiresauce and salt and pepper to taste.  Leave to simmer for about 30 minutes.  

Preheat the oven to 200º C ( 390º F). Thaw out the puff pastry. Put the leaves on top of eachother and roll out to a circle of  26 cm (10 inches) wide. Put the simmering mixture into a round cake tin of about 24 cm (9,5 inches). Cover with puff pastry and stick to tin with some water. Make 3 holes in dough with an apple corer.  

Beat the egg and cover puff pastry with it. Bake the pie for 30 minutes in the oven until its lid is golden brown. Tastes lovely with a salad on the side. 

Serves 4.
