Droëvrugte-bobotie

A great, savoury and traditional recipe from a country which claims to be "the world in one country", South Africa... This dish has typical Eastern influences, so enjoy! 

 Ingredients:         

  • 1 kg (2 lb.) of minced beef or minced lamb/mutton
  • 2 thick slices of old white bread, crumbled up
  • 6 dried apple rings
  • 6 dried apricots
  • 125 ml of stoneless raisins
  • some cold black tea, lemon juice or water
  • 2 large onions, chopped into slices
  • 200 ml of water
  • 200 ml of oil
  • some butter or oil
  • 15 grams of curry (sweet or spicey - up to you)
  • 10 grams of turmeric
  • 50 ml of vinegar
  • salt & pepper to taste
  •  2 eggs
  • 125 ml of milk
  • fresh lemon leaves (optional)
Preparation: 

Soak the apricots, apple rings and raisons in some cold black tea, lemon juice or water until soft. Drain the fruit, cut apricots in half and cut apple rings into pieces. Preheat the oven to 180° C or 350° F.  Grease an oven dish (with a volume of 2 liters) with some butter or oil. Boil the onions until soft. Add the oil and fry the onions slightly, then add the curry powder and turmeric and fry for a minute or two. Add the minced meat, bread crumbs, vinegar, salt, pepper and soaked fruit and mix gently with a spoon. Leave the mixture to simmer slowly, stir a few times. Fill the oven dish with the mixture. Fold the lemon leaves and press them into the mixture gently. Bake the bobotie for about 45 minutes in the oven (on the centre rack) or until the egg mixture has set. Serve hot.
